- 4 cups Watermelon, cubed 600g
- 1 large Cucumber, diced 300g
- 1 cup Feta cheese, crumbled 150g
- 1/4 cup Fresh mint leaves, chopped 10g
- 1/4 cup Red onion, thinly sliced 40g
- 2 tablespoons Extra virgin olive oil 30ml
- 1 lime Lime, juiced 2 tablespoons, 30ml
- 1 teaspoon Honey 5ml
- a pinch Kosher salt 1g
- to taste Black pepper, freshly ground 0.5g
Begin by preparing the watermelon. Cut the watermelon into 1-inch cubes, removing any seeds if necessary, and place them in a large salad bowl.
Peel and dice the cucumber into pieces that are similar in size to the watermelon cubes. Add them to the bowl with the watermelon.
Crumble the feta cheese into bite-sized pieces, and add it to the bowl with watermelon and cucumber.
Thinly slice the red onion and chop the fresh mint leaves. Scatter both over the other ingredients in the salad bowl.
In a small bowl or jar, whisk together the extra virgin olive oil, fresh lime juice, honey, kosher salt, and freshly ground black pepper to create the dressing.
Pour the dressing over the salad and gently toss to combine all the ingredients, ensuring each piece is lightly coated with the dressing.
Let the salad sit for about 5 minutes to allow the flavors to meld together.
Give the salad another gentle toss before serving. Adjust seasoning if necessary, and garnish with additional mint leaves for a fresh touch.
For a vegan version of this salad, omit the feta cheese or replace it with a dairy-free alternative.
If you prefer a bit of a kick, add a sprinkle of chili flakes to the dressing.
This salad is best enjoyed fresh, but you can refrigerate it for up to a day. Keep in mind that the watermelon will release more juices the longer it sits.
