- 1 tablespoon olive oil 15 ml
- 4 ounces sucuk sausage thinly sliced, 113 g
- 1 medium onion finely chopped, about 150 g
- 1 green bell pepper diced, about 150 g
- 1 red bell pepper diced, about 150 g
- 2 cloves garlic minced
- 1 teaspoon paprika 2 g
- 1/2 teaspoon cumin 1 g
- 1/4 teaspoon black pepper 0.5 g
- 1/4 teaspoon salt 1.5 g
- 4 large eggs about 200 g
- 1 can diced tomatoes drained, 400 g
- 3 ounces feta cheese crumbled, 85 g
- 2 tablespoons fresh parsley chopped, 8 g
Heat olive oil in a large skillet over medium heat. Add the sliced sucuk and cook for about 5 minutes until it starts to brown, stirring occasionally.
Add the chopped onion to the skillet and sauté with the sucuk for 2-3 minutes until the onion begins to soften.
Stir in the diced green and red bell peppers, and cook for another 5 minutes until the vegetables are tender.
Add the minced garlic, paprika, cumin, black pepper, and salt to the skillet, and cook for 1 minute until fragrant.
Crack the eggs into the skillet over the mixture. Let them cook for a minute before gently stirring to combine with the vegetables and sucuk.
Pour the drained diced tomatoes into the skillet. Stir the mixture gently to ensure even cooking of the eggs and to distribute the tomatoes throughout.
Crumble the feta cheese over the top of the menemen and cover the skillet with a lid. Let it cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
Garnish with chopped fresh parsley before serving.
Adjust the heat level by using mild or spicy sucuk according to your preference.
If fresh tomatoes are in season, you can substitute the canned tomatoes with 2 cups of finely chopped fresh tomatoes.
For a vegetarian version, omit the sucuk and add more vegetables or a plant-based sausage alternative.
