Ingredients
  

Tuna

  • 2 cans tuna in olive oil 4 ounces/113 grams each, drained

Eggs

  • 4 large eggs

Salad

  • 1 small red onion approximately 4 ounces/113 grams, thinly sliced
  • 1 cup cherry tomatoes 5 ounces/150 grams, halved
  • 1 medium cucumber approximately 8 ounces/227 grams, diced
  • 1/2 cup pitted Kalamata olives 2.5 ounces/70 grams, halved
  • 1/2 cup chopped fresh parsley 1 ounce/28 grams

Harissa Dressing

  • 1/4 cup extra virgin olive oil 2 ounces/60 mL
  • 2 tablespoons harissa paste
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions
 

  • Place the eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let stand for 10 minutes. Drain and cool in ice water. Peel the eggs and cut into quarters.
  • In a large bowl, combine the sliced red onion, cherry tomatoes, cucumber, Kalamata olives, and chopped parsley.
  • In a small bowl, whisk together the extra virgin olive oil, harissa paste, fresh lemon juice, honey, and season with salt and pepper to taste. Adjust the seasoning and spiciness according to your preference.
  • Add the drained tuna to the salad base and gently mix to combine. Drizzle the harissa dressing over the salad and toss until everything is well coated.
  • Divide the salad among plates and garnish with the quartered eggs. Serve immediately for the freshest taste.

Notes

For a milder dressing, reduce the amount of harissa paste.
This salad can be customized with additional vegetables like bell peppers or radishes.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
If you're preparing this salad in advance, add the dressing just before serving to keep the ingredients fresh and crisp.
