Ingredients
  

  • 1 cup green lentils rinsed
  • 4 cups water
  • 4 medium carrots peeled and julienned
  • 1 red onion thinly sliced
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • Salt and black pepper to taste
  • 1/4 cup fresh coriander (cilantro) chopped
  • 2 tbsp lemon juice
  • 1 garlic clove minced
  • 1 tsp honey or agave syrup optional for vegan version

Instructions
 

  • Place the rinsed lentils and water in a medium saucepan over medium-high heat. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender but not mushy. Drain and set aside to cool.
  • While the lentils are cooking, prepare the dressing. In a small bowl, whisk together the olive oil, lemon juice, ground cumin, ground coriander, cayenne pepper, minced garlic, honey or agave syrup, salt, and black pepper until well combined. Set aside.
  • In a large mixing bowl, toss the julienned carrots and thinly sliced red onion with the cooled lentils.
  • Pour the dressing over the lentil and carrot mixture and gently mix until everything is well coated.
  • Adjust the seasoning with more salt and pepper if needed, then stir in the fresh coriander.
  • Let the salad sit for at least 10 minutes to allow the flavors to meld together before serving.

Notes

To enhance the nuttiness of the lentils, consider toasting them in a dry pan for a few minutes before boiling.
For a gluten-free option, ensure all spice blends are free from additives that may contain gluten.
This salad can be served warm or at room temperature and makes excellent leftovers, as the flavors continue to develop.
If you're looking to add an extra crunch, sprinkle some toasted almonds or pumpkin seeds on top before serving.
