Ingredients
  

  • 1 cup green lentils rinsed
  • 2 cups pumpkin peeled and diced into 1/2-inch cubes
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 can diced tomatoes 14 oz or 400g
  • 4 cups vegetable broth
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes
  • Salt and pepper to taste
  • 2 tbsp fresh parsley chopped for garnish

Instructions
 

  • Prepare the Lentils and Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  • Cook the Pumpkin: Add the diced pumpkin to the pot and cook for an additional 5 minutes, stirring occasionally.
  • Add the Lentils: Stir in the green lentils, making sure they are well incorporated with the vegetables.
  • Add Liquids and Spices: Pour in the diced tomatoes and vegetable broth. Season with dried oregano, crushed red pepper flakes, salt, and pepper. Give the mixture a good stir.
  • Simmer the Stew: Bring the stew to a boil, then reduce the heat to a simmer. Cover and let it cook for about 35 minutes, or until the lentils and pumpkin are tender.
  • Check Consistency and Season: If the stew is too thick, add a little more broth or water until you reach your desired consistency. Taste and adjust seasoning if necessary.
  • Garnish and Serve: Once the stew is cooked, remove from heat. Ladle into bowls and garnish with fresh parsley.

Notes

For a non-vegetarian version, consider adding chopped chorizo or pancetta when sautéing the onions.
If you prefer a creamier stew, blend a portion of the stew before serving.
This stew can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 1 month.
To enhance the flavor, consider roasting the pumpkin before adding it to the stew.
