Roasted Garlic and White Bean Dip with Whole Grain Pita Chips

For the Roasted Garlic and White Bean Dip:
- 2 heads garlic approximately 56g/2oz each
- 2 tbsp olive oil plus extra for drizzling
- 2 cups canned white beans drained and rinsed, approximately 400g/14oz
- 2 tbsp fresh lemon juice
- 1 tsp sea salt
- 1/2 tsp ground black pepper
- 1/4 cup water or as needed for consistency
- 2 tbsp fresh parsley chopped (for garnish)
For the Whole Grain Pita Chips:
- 4 rounds whole grain pita bread approximately 228g/8oz total
- 1 tbsp olive oil
- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
Prepare the Garlic: Preheat your oven to 400°F (200°C). Slice the top off each head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap each head in aluminum foil. Place in the oven and roast for 40 minutes, or until cloves are soft and golden.
Make the Pita Chips: While the garlic is roasting, slice the pita bread into triangles and spread them out on a baking sheet. Brush with olive oil and sprinkle with sea salt and pepper. Bake in the oven for 8-10 minutes, or until crispy and golden brown. Remove from oven and let cool.
Blend the Dip: Once the garlic is roasted, let it cool slightly before squeezing the soft cloves into a food processor. Add the white beans, remaining 1 tablespoon of olive oil, lemon juice, salt, and pepper. Blend until smooth, adding water as needed to reach desired consistency.
Garnish and Serve: Transfer the dip to a serving bowl, drizzle with a little olive oil, and garnish with chopped parsley. Serve with the pita chips on the side for dipping.
For a smoother dip, add more water or olive oil to the food processor when blending.
The dip can be refrigerated in an airtight container for up to 3 days.
If you prefer a zestier flavor, add a pinch of red pepper flakes or cumin to the dip blend.
Whole grain pita bread can be substituted with your choice of pita for a different flavor profile.
