Ingredients
  

For the Roasted Garlic and White Bean Dip:

  • 2 heads garlic approximately 56g/2oz each
  • 2 tbsp olive oil plus extra for drizzling
  • 2 cups canned white beans drained and rinsed, approximately 400g/14oz
  • 2 tbsp fresh lemon juice
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 1/4 cup water or as needed for consistency
  • 2 tbsp fresh parsley chopped (for garnish)

For the Whole Grain Pita Chips:

  • 4 rounds whole grain pita bread approximately 228g/8oz total
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper

Instructions
 

  • Prepare the Garlic: Preheat your oven to 400°F (200°C). Slice the top off each head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap each head in aluminum foil. Place in the oven and roast for 40 minutes, or until cloves are soft and golden.
  • Make the Pita Chips: While the garlic is roasting, slice the pita bread into triangles and spread them out on a baking sheet. Brush with olive oil and sprinkle with sea salt and pepper. Bake in the oven for 8-10 minutes, or until crispy and golden brown. Remove from oven and let cool.
  • Blend the Dip: Once the garlic is roasted, let it cool slightly before squeezing the soft cloves into a food processor. Add the white beans, remaining 1 tablespoon of olive oil, lemon juice, salt, and pepper. Blend until smooth, adding water as needed to reach desired consistency.
  • Garnish and Serve: Transfer the dip to a serving bowl, drizzle with a little olive oil, and garnish with chopped parsley. Serve with the pita chips on the side for dipping.

Notes

For a smoother dip, add more water or olive oil to the food processor when blending.
The dip can be refrigerated in an airtight container for up to 3 days.
If you prefer a zestier flavor, add a pinch of red pepper flakes or cumin to the dip blend.
Whole grain pita bread can be substituted with your choice of pita for a different flavor profile.
