Ingredients
  

  • 1 cup quinoa 170g, rinsed
  • 2 cups water 473ml
  • 1 large bunch fresh parsley about 2 cups/60g, finely chopped
  • 1/2 cup fresh mint leaves 15g, finely chopped
  • 4 medium tomatoes about 2 cups/300g, diced
  • 1 medium cucumber about 1 cup/150g, diced
  • 3 green onions 45g, thinly sliced
  • 1/4 cup olive oil 60ml
  • 1/4 cup fresh lemon juice 60ml
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions
 

  • Place the quinoa and water in a medium saucepan over medium-high heat. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked and water is absorbed. Fluff with a fork and let cool to room temperature.
  • While the quinoa is cooling, prepare the vegetables. Wash and finely chop the parsley and mint leaves. Dice the tomatoes and cucumber, and thinly slice the green onions.
  • In a small bowl, whisk together the olive oil, fresh lemon juice, and lemon zest to create the dressing. Season with salt and pepper to taste.
  • In a large mixing bowl, combine the cooled quinoa, chopped parsley, mint, tomatoes, cucumber, and green onions.
  • Drizzle the dressing over the quinoa mixture and toss to combine thoroughly.
  • Taste and adjust the seasoning if necessary. Let the tabbouleh sit for at least 10 minutes to allow flavors to meld.
  • Serve chilled or at room temperature, garnished with additional fresh herbs if desired.

Notes

For best results, let the tabbouleh chill in the refrigerator for an hour before serving to enhance the flavors.
Quinoa tabbouleh can be stored in an airtight container in the refrigerator for up to 3 days.
