Equipment

  • Medium-sized mixing bowl
  • Measuring cups and spoons
  • Spoon for mixing
  • Serving bowls or jars

Ingredients

  • 1 cup rolled oats 90g
  • 1 cup unsweetened almond milk 240ml
  • 1/2 cup Greek yogurt 120g
  • 2 tablespoons honey 30ml, plus extra for drizzling
  • 1/2 teaspoon vanilla extract 2.5ml
  • 1/4 teaspoon ground cinnamon 0.5g
  • Pinch of salt
  • 4 fresh figs, quartered about 160g

Optional toppings: chopped nuts, seeds, additional Greek yogurt

Instructions

  • In a medium-sized mixing bowl, combine the rolled oats and unsweetened almond milk. Stir until the oats are fully immersed in the liquid.
  • Add Greek yogurt to the oat mixture, drizzling in the honey, vanilla extract, ground cinnamon, and a pinch of salt. Mix thoroughly to ensure all ingredients are well incorporated.
  • Cover the bowl with a lid or plastic wrap and place it in the refrigerator overnight, or for at least 8 hours, to allow the oats to absorb the liquid and flavors to meld.
  • The next morning, give the oats a good stir. If the mixture is too thick, you can thin it out with a little more almond milk to reach your desired consistency.
  • Divide the oat mixture between two serving bowls or jars.
  • Top each serving with fresh quartered figs, adding a drizzle of honey for extra sweetness if desired. For added texture and nutrients, sprinkle with optional toppings like chopped nuts or seeds.
  • Serve immediately or keep refrigerated until ready to eat. Enjoy your wholesome and delicious Overnight Oats with Greek Yogurt and Fresh Figs!
