Ingredients
  

Whole Grain Crust

  • 1 1/4 cups whole wheat flour 155g
  • 1/4 cup olive oil 60ml
  • 1/2 tsp salt 2.5g
  • 1/4 cup cold water 60ml

Quiche Filling

  • 1 tbsp olive oil 15ml
  • 1 cup red bell pepper, diced 150g
  • 1 cup zucchini, sliced 120g
  • 1/2 cup red onion, chopped 75g
  • 2 cloves garlic, minced
  • 1 cup fresh spinach leaves 30g
  • 1/2 cup crumbled feta cheese 75g
  • 4 large eggs
  • 1 cup milk 240ml
  • 1/2 tsp dried oregano 1g
  • 1/2 tsp dried basil 1g
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • For the crust, combine whole wheat flour and salt in a large mixing bowl. Gradually add olive oil and mix until the mixture resembles coarse crumbs.
  • Add cold water and stir until the dough comes together; you may need to add a little more water to reach the desired consistency.
  • Press the dough evenly into a 9-inch (23cm) pie pan, forming a crust. Bake for 10 minutes, then remove from the oven.
  • Heat olive oil in a skillet over medium heat. Add red bell pepper, zucchini, and red onion, sautéing until softened, about 5 minutes.
  • Add garlic and spinach, cooking until the spinach is wilted.
  • Spread the vegetable mixture evenly over the pre-baked crust. Sprinkle with crumbled feta cheese.
  • In a bowl, whisk together eggs, milk, oregano, basil, salt, and pepper. Pour this mixture over the vegetables and cheese.
  • Bake the quiche for 35-40 minutes, or until the center is set and the top is golden brown.
  • Let the quiche cool for a few minutes before slicing and serving.

Notes

For a gluten-free alternative, use a gluten-free flour blend in place of whole wheat flour.
Customize the quiche with your favorite Mediterranean vegetables, such as artichokes or roasted red peppers.
Store leftovers in the refrigerator for up to 3 days. Reheat in the oven for best results.
