Ingredients
  

  • 2 cans tuna in olive oil 12 oz/340 g each, drained
  • 1 cup cherry tomatoes halved
  • 1/2 cup Sicilian green olives pitted and sliced
  • 1/4 cup red onion finely chopped
  • 2 tablespoons capers drained
  • 1/4 cup fresh parsley chopped
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Mixed salad greens for serving (optional)

Instructions
 

  • Begin by draining the tuna and placing it in a large mixing bowl. Using a fork, flake the tuna into small pieces.
  • Add the halved cherry tomatoes, sliced Sicilian olives, finely chopped red onion, and capers to the bowl with the tuna.
  • In a small bowl, whisk together the extra virgin olive oil and fresh lemon juice until well combined. Season with salt and pepper to taste.
  • Pour the dressing over the tuna mixture and toss gently to coat all the ingredients evenly.
  • Fold in the chopped fresh parsley, giving the salad a fresh herbaceous note.
  • If desired, arrange mixed salad greens on plates or a serving platter. Top with the tuna salad.
  • Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld together before serving.

Notes

For a less salty version, rinse the capers and olives before adding them to the salad.
This salad can be stored in an airtight container in the refrigerator for up to two days, making it a great make-ahead option.
