Ingredients
  

  • 1 lb chicken breast thinly sliced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 head Romaine lettuce leaves separated
  • 1/2 cup tzatziki sauce
  • 1/2 cup pomegranate seeds
  • 2 tbsp fresh lemon juice
  • 1/4 cup fresh mint leaves chopped

Instructions
 

  • In a mixing bowl, combine the chicken breast with olive oil, cumin, smoked paprika, garlic powder, salt, and pepper. Toss until the chicken is well coated with the spices.
  • Heat a skillet over medium-high heat. Add the chicken and cook for about 5 minutes on each side, or until the chicken is golden brown and cooked through. Drizzle with lemon juice and set aside to cool slightly.
  • While the chicken is cooking, prepare the lettuce leaves, rinsing them under cold water and patting them dry with paper towels.
  • Chop the cooked chicken into bite-sized pieces, then assemble the wraps by placing a spoonful of chicken onto the center of each lettuce leaf.
  • Top the chicken with a generous dollop of tzatziki sauce and sprinkle with pomegranate seeds and chopped mint.
  • Fold the sides of the lettuce over the filling and roll up to secure. Serve immediately.

Notes

For the best flavor, use fresh herbs for the tzatziki sauce and garnish. If pomegranate is not in season, dried cranberries can be a sweet-tart substitute. To keep the wraps low-carb, ensure the tzatziki sauce is made without added sugars. Enjoy this dish as a part of a mezze platter or as a standalone light meal.
