Equipment

  • Grater
  • Large bowl
  • Toaster, grill, or skillet
  • Knife
  • Cutting board

Ingredients

  • 4 large ripe tomatoes, coarsely grated (about 2 cups/500g)
  • 4 slices rustic bread (country-style or sourdough) each slice about 1-inch thick
  • 1/4 cup extra virgin olive oil plus extra for drizzling
  • 2 cloves garlic, peeled and halved
  • 1/2 tsp sea salt or to taste
  • 1/2 tsp freshly ground black pepper or to taste

Optional garnishes: chopped fresh parsley, olives, anchovies, or capers

Instructions

  • Begin by grating the tomatoes over a large bowl to catch all the juices. Discard the skins or save them for another use.
  • Toast the slices of bread until they are golden and crispy. You can use a toaster, a grill, or a skillet on the stovetop for this step.
  • Once the bread is toasted, immediately rub one side of each slice with the cut side of the garlic cloves. This will infuse the bread with a subtle garlic flavor.
  • Drizzle each slice of garlic-rubbed bread generously with extra virgin olive oil.
  • Spoon the grated tomato over the bread, ensuring each slice is covered with a hearty layer of tomato and its juices.
  • Season the tomato-topped bread with sea salt and freshly ground black pepper to taste.
  • If desired, add any optional garnishes such as chopped fresh parsley, olives, anchovies, or capers.
  • Serve immediately as an appetizer, allowing guests to enjoy the contrasting textures and flavors.

Notes

For the best flavor, use tomatoes that are in season and bread that is a day or two old for the perfect texture.
The quality of the olive oil can make a big difference in this dish, so choose a good extra virgin olive oil for drizzling.
This dish is best enjoyed immediately after preparation to experience the full spectrum of textures.
