Equipment

  • Food processor
  • Measuring cups and spoons
  • Knife
  • Cutting board

Ingredients

  • 1 cup green olives, pitted
  • 2 tbsp capers, drained
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1 tsp fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • 1/4 tsp red pepper flakes optional
  • Freshly ground black pepper, to taste

Instructions

  • Start by gathering all your ingredients. Ensure that the olives and capers are drained well to avoid excess moisture in the tapenade.
  • In a food processor, combine the green olives, capers, and minced garlic. Pulse a few times until the ingredients are coarsely chopped.
  • Slowly drizzle in the extra virgin olive oil while pulsing the mixture. Continue to pulse until the ingredients form a coarse paste.
  • Add in the fresh lemon juice, chopped parsley, thyme leaves, and red pepper flakes if using. Pulse a few more times to incorporate the herbs evenly throughout the tapenade.
  • Season with freshly ground black pepper to taste. Be mindful of the salt content, as the olives and capers already contribute a briny flavor.
  • Transfer the tapenade to a serving bowl. If not serving immediately, cover and refrigerate to let the flavors meld together.
  • Serve the tapenade with crusty bread, crackers, or as a condiment for grilled meats or vegetables.

Notes

For a smoother texture, continue to process the tapenade to your desired consistency.
You can substitute the green olives with a mix of green and black olives for a more complex flavor profile.
The tapenade can be stored in an airtight container in the refrigerator for up to one week.
For a vegan-friendly version, ensure that the olives and capers are not packaged with any animal products.
