Ingredients
  

  • 4 medium pears, peeled about 600g / 1.3 lbs
  • 4 cups water
  • 1/2 cup honey
  • 2 tablespoons dried lavender flowers
  • 2 strips lemon zest
  • 1 cinnamon stick
  • 2 cups Greek yogurt 475g
  • Fresh lavender flowers for garnish optional

Instructions
 

  • In a large saucepan, combine water, honey, dried lavender flowers, lemon zest, and cinnamon stick. Bring the mixture to a gentle simmer over medium heat, stirring until the honey is fully dissolved.
  • Carefully place the peeled pears into the simmering liquid, ensuring they are fully submerged. Reduce the heat to low and poach the pears for 20-25 minutes, or until they are tender but still hold their shape.
  • Once the pears are poached, remove the saucepan from the heat and allow the pears to cool in the liquid for enhanced flavor absorption.
  • While the pears are cooling, prepare the serving plates by spooning a half-cup of Greek yogurt into the center of each plate.
  • Carefully remove the pears from the poaching liquid, gently pat them dry, and place one pear on top of the yogurt on each plate.
  • Drizzle each pear with a tablespoon of the poaching liquid, ensuring to avoid the lavender flowers and spices.
  • Garnish with fresh lavender flowers if desired, and serve immediately for a warm dessert or chill in the refrigerator for a cool treat.

Notes

For those who prefer a less floral taste, the amount of dried lavender can be reduced. Ensure that the honey used is of good quality, as it is a prominent flavor in this dish. If fresh lavender is not available for garnish, the dessert can be finished with a sprinkle of cinnamon or a drizzle of honey instead.
