Istanbul-Style Spinach and Cheese Börek (Ispanaklı Börek)

Ingredients
  

  • 12 sheets Phyllo dough 16x12 inches each
  • 1 lb Fresh spinach washed and chopped
  • 7 oz Feta cheese crumbled
  • 1 cup Shredded mozzarella cheese
  • 1 Large onion finely chopped
  • 2 Garlic cloves minced
  • 1/4 cup Olive oil plus extra for brushing
  • 2 Large eggs beaten
  • 1/4 cup Fresh dill chopped
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • Sesame seeds for garnish (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, warm 2 tablespoons of olive oil. Add the onions and garlic, sautéing until translucent.
  • Stir in the spinach and cook until it wilts and the excess moisture evaporates. Remove from heat.
  • In a large mixing bowl, combine the spinach mixture, feta cheese, mozzarella cheese, eggs, dill, salt, and black pepper. Mix well to combine.
  • Layer two sheets of phyllo dough on a clean work surface, brushing each with olive oil. Place a portion of the spinach and cheese mixture along the longer edge of the dough.
  • Roll the dough away from you to encase the filling in a log shape. Brush the top with more olive oil and sprinkle with sesame seeds if desired.
  • Repeat with the remaining phyllo sheets and filling.
  • Carefully place the börek logs on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 30 minutes, or until the börek is golden brown and crispy.
  • Allow to cool for a few minutes before slicing and serving.

Notes

Phyllo dough dries out quickly, so keep it covered with a damp cloth while assembling the böreks.
For a vegan version, substitute the cheese with vegan alternatives and use an egg replacement.
The filling can be prepared ahead of time and refrigerated to save on prep time.
Serve Ispanaklı Börek with a side of yogurt or a light salad for a complete meal.
