Ingredients
  

  • 1 pound fresh sardines, cleaned and gutted
  • 2 tablespoons olive oil
  • 1 lemon, thinly sliced
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons fresh dill, finely chopped
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon red pepper flakes (optional)

Instructions
 

  • 1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  • 2. Rinse the sardines under cold water and pat them dry with paper towels. Lay them on the prepared baking sheet in a single layer.
  • 3. In a small bowl, combine olive oil, garlic, parsley, dill, salt, pepper, and red pepper flakes, if using. Mix well to create a herb marinade.
  • 4. Brush the sardines with the herb marinade, ensuring they are well coated. Place one or two lemon slices on top of each sardine.
  • 5. Bake in the preheated oven for 20 minutes, or until the sardines are cooked through and the edges are beginning to crisp.
  • 6. Once baked, remove from the oven and let it rest for a couple of minutes before serving.
