Bell Peppers
- 4 large bell peppers (assorted colors) tops removed and seeded (approx. 1 lb / 450g)
Goat Cheese Mixture
- 8 oz goat cheese softened
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh parsley finely chopped
- 1 tbsp fresh basil finely chopped
- 1 tsp fresh thyme leaves stripped
- 1 clove garlic minced (approx. 1 teaspoon / 5g)
- Salt and pepper to taste
- Optional garnish: additional herbs or a drizzle of balsamic glaze
Preheat your oven to 375°F (190°C). Arrange the bell peppers in a baking dish with the cut sides facing up.
In a mixing bowl, combine the softened goat cheese, olive oil, parsley, basil, thyme, and minced garlic. Season the mixture with salt and pepper, and stir until all the ingredients are well incorporated and the mixture is smooth.
Spoon the herbed goat cheese mixture evenly into each bell pepper cavity, pressing gently to ensure the mixture is packed firmly.
Place the stuffed peppers in the preheated oven and bake for about 20 minutes, or until the peppers are tender and the goat cheese is slightly golden on top.
Remove from the oven and let cool for a couple of minutes. If desired, garnish with additional chopped herbs or a drizzle of balsamic glaze. Serve warm.
For a lighter version, you can use part-skim goat cheese.
