Ingredients
  

Feta Cheese

  • 8 ounces feta cheese cut into 1/2 inch slices

Marinade for Feta

  • 1 tablespoon fresh oregano chopped

Roasted Grapes

  • 2 cups red grapes
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil

Crostini

  • 1 baguette sliced into 1/2 inch pieces
  • 2 tablespoons olive oil
  • salt to taste

Instructions
 

  • Start by preheating your oven to 400°F (200°C).
  • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, thyme, oregano, and red pepper flakes to create the marinade.
  • Place the feta slices in a shallow dish and pour the marinade over them, ensuring each piece is well-coated. Let it marinate for at least 15 minutes, or longer if time allows.
  • While the feta is marinating, toss the grapes with balsamic vinegar, olive oil, and a pinch of salt. Spread them out on a baking sheet lined with parchment paper.
  • Roast the grapes in the preheated oven for about 15-20 minutes, or until they start to burst and caramelize. Remove from the oven and let cool slightly.
  • For the crostini, brush each baguette slice with olive oil and sprinkle with a touch of salt. Arrange them on a baking sheet.
  • Toast the baguette slices in the oven for 8-10 minutes, or until they are golden and crispy.
  • To assemble, place a slice of marinated feta on each crostini and top with a spoonful of roasted grapes.
  • Serve immediately and enjoy the symphony of flavors.

Notes

The feta can be marinated up to 24 hours in advance for deeper flavor.
For a gluten-free option, use gluten-free bread for the crostini.
If you prefer a milder taste, reduce the amount of crushed red pepper flakes.
