Ingredients
  

For the Grilled Vegetables:

  • 1 medium zucchini sliced into 1/2-inch rounds (approx. 227g)
  • 1 medium yellow squash sliced into 1/2-inch rounds (approx. 227g)
  • 1 red bell pepper seeded and cut into 1-inch pieces (approx. 150g)
  • 1 yellow bell pepper seeded and cut into 1-inch pieces (approx. 150g)
  • 1 red onion cut into 1/2-inch rounds (approx. 200g)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Sicilian Herb Dressing:

  • 1/4 cup fresh basil leaves finely chopped (approx. 15g)
  • 1/4 cup fresh parsley leaves finely chopped (approx. 15g)
  • 2 tablespoons fresh oregano leaves finely chopped (approx. 6g)
  • 1 garlic clove minced (approx. 3g)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions
 

  • Preheat your grill to medium-high heat.
  • In a large bowl, toss the zucchini, yellow squash, bell peppers, and red onion with olive oil, salt, and pepper until evenly coated.
  • Place the vegetables on the grill in a single layer, ensuring not to overcrowd the grill. Grill for 4-5 minutes on each side or until they have nice grill marks and are tender-crisp.
  • While the vegetables are grilling, prepare the Sicilian herb dressing. In a small bowl, whisk together the chopped basil, parsley, oregano, minced garlic, extra virgin olive oil, red wine vinegar, honey, salt, and pepper until well combined.
  • Once the vegetables are grilled, transfer them to a serving platter.
  • Drizzle the Sicilian herb dressing over the warm grilled vegetables.
  • Serve immediately or at room temperature, allowing the flavors to meld together.

Notes

If a grill is not available, a grill pan can be used to cook the vegetables on the stovetop.
The vegetables can be varied according to seasonality and preference.
The Sicilian herb dressing can be made ahead of time and stored in the refrigerator for up to 3 days.
If you prefer a zestier dressing, add a teaspoon of lemon zest or a splash of lemon juice.
For a vegan version, substitute honey with maple syrup or agave nectar.
