Ingredients
  

For the Greek Chicken:

  • 4 boneless, skinless chicken breasts about 2 lbs / 900g
  • 2 tbsp olive oil 30ml
  • 4 cloves garlic minced
  • 1 lemon zested and juiced
  • 1 tbsp dried oregano 15g
  • 1 tsp salt 5g
  • 1/2 tsp black pepper 2.5g

For the Tzatziki:

  • 1 cup Greek yogurt 245g
  • 1 cucumber seeded and grated
  • 2 cloves garlic minced
  • 1 tbsp dill chopped, 15g
  • 1 tbsp lemon juice 15ml

For the Pistachio Gremolata:

  • 1/2 cup shelled pistachios finely chopped, 60g
  • 1/4 cup fresh parsley chopped, 15g
  • 1 lemon zest of
  • 2 cloves garlic minced
  • 2 tbsp olive oil 30ml

Instructions
 

  • In a bowl, combine olive oil, minced garlic, lemon zest and juice, oregano, salt, and pepper.
  • Place chicken breasts in the mixture, ensuring they are well coated. Marinate for at least 30 minutes, or overnight for more flavor.
  • Preheat your grill to medium-high heat.
  • Grill chicken for about 7-10 minutes per side, until the internal temperature reaches 165°F (74°C) and juices run clear.
  • Allow chicken to rest for 5 minutes before slicing.
  • Combine Greek yogurt, grated cucumber, minced garlic, chopped dill, and lemon juice in a bowl.
  • Season with salt and pepper to taste. Chill in the refrigerator until ready to serve.
  • Mix together chopped pistachios, parsley, lemon zest, minced garlic, and olive oil in a bowl.
  • Season with salt to taste. Set aside for serving.

Notes

For the best flavor, marinate the chicken overnight.
If you prefer, you can substitute the pistachios with almonds or walnuts.
To achieve perfect grill marks, avoid moving the chicken too much while grilling.
The Tzatziki can be made ahead and stored in the refrigerator for up to 2 days.
Serve this dish with a side of grilled vegetables or a fresh Greek salad for a complete Mediterranean meal.
