Ingredients
  

  • 1 lb fresh asparagus, ends trimmed
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup Parmesan cheese, shaved
  • 1 lemon, zest and juice
  • 1 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1/4 cup extra virgin olive oil
  • 1 clove garlic, minced

Instructions
 

  • Preheat your grill to medium-high heat.
  • While the grill is heating, prepare the lemon vinaigrette by whisking together lemon zest, lemon juice, white wine vinegar, Dijon mustard, minced garlic, and extra virgin olive oil in a small bowl until emulsified. Season with salt and pepper to taste. Set aside.
  • Toss the asparagus spears with 2 tablespoons of olive oil and season with salt and pepper.
  • Place the asparagus on the grill in a single layer. Grill for 4-5 minutes, turning occasionally, until the asparagus is tender and charred in spots.
  • Remove the asparagus from the grill and arrange on a serving platter.
  • Drizzle the grilled asparagus with the lemon vinaigrette and top with shaved Parmesan cheese.
  • Serve immediately.

Notes

For the best flavor, use high-quality Parmesan cheese and shave it yourself with a vegetable peeler.
Adjust the amount of lemon in the vinaigrette according to your taste. If you prefer a milder lemon flavor, start with the juice of half a lemon and add more as needed.
The asparagus can also be roasted in the oven at 400°F (200°C) for 12-15 minutes if grilling is not an option.
