- 1 lb fresh asparagus, ends trimmed
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- 1/2 cup Parmesan cheese, shaved
- 1 lemon, zest and juice
- 1 tbsp white wine vinegar
- 1 tsp Dijon mustard
- 1/4 cup extra virgin olive oil
- 1 clove garlic, minced
Preheat your grill to medium-high heat.
While the grill is heating, prepare the lemon vinaigrette by whisking together lemon zest, lemon juice, white wine vinegar, Dijon mustard, minced garlic, and extra virgin olive oil in a small bowl until emulsified. Season with salt and pepper to taste. Set aside.
Toss the asparagus spears with 2 tablespoons of olive oil and season with salt and pepper.
Place the asparagus on the grill in a single layer. Grill for 4-5 minutes, turning occasionally, until the asparagus is tender and charred in spots.
Remove the asparagus from the grill and arrange on a serving platter.
Drizzle the grilled asparagus with the lemon vinaigrette and top with shaved Parmesan cheese.

The asparagus can also be roasted in the oven at 400°F (200°C) for 12-15 minutes if grilling is not an option.
