- 8 fresh figs, quartered 300g / 10.5 oz
- 150 g soft goat cheese, crumbled 5.3 oz
- 70 g mixed salad greens 2.5 oz
- 30 g pine nuts, toasted 1 oz
- 2 tablespoons extra virgin olive oil 30ml
- 1 tablespoon balsamic vinegar 15ml
- 1 teaspoon honey 7ml
- Salt and pepper to taste

Begin by washing the mixed salad greens and patting them dry with a paper towel. Arrange them as the base on a large serving platter or in a salad bowl.
Quarter the fresh figs and scatter them evenly over the greens.
Crumble the goat cheese with your hands and sprinkle it over the figs and greens.
In a small pan over medium heat, lightly toast the pine nuts until golden brown, shaking the pan occasionally to prevent burning. This should take about 3-5 minutes. Once toasted, set aside to cool.
For the dressing, whisk together the extra virgin olive oil, balsamic vinegar, and honey in a small bowl until well combined. Season with salt and pepper to taste.
Drizzle the dressing over the salad, ensuring even coverage.
Garnish the salad with the toasted pine nuts and fresh mint leaves.
