- 4 cups water
- 2 large tomatoes diced, approx. 400g
- 1 medium red onion finely chopped, approx. 150g
- 1 cucumber diced, approx. 200g
- 1/4 cup extra virgin olive oil
- 3 tablespoons fresh lemon juice
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon black pepper or to taste
- 1/4 cup fresh parsley chopped
- 1/4 cup fresh mint chopped
Place the lentils and water in a medium saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes, or until the lentils are tender but still hold their shape. Drain any excess water and let cool.
