- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 cup fresh mint leaves, finely chopped
- 1 small red onion, thinly sliced
- 1/3 cup feta cheese, crumbled
- Salt and pepper, to taste
Bring a large pot of salted water to a boil. Add the green beans and cook for 4-5 minutes until they are bright green and tender-crisp. Immediately plunge the beans into an ice water bath to halt the cooking process and preserve their vibrant color. Drain well.
